Atta Pinni recipe: How to make this delicious Punjabi sweet dish at home

If you are craving for something sweet and healthy, then you should definitely try Atta pinni also known as Panjiri. The delectable treat is made with atta and is known for its flavour. Atta pinni is super popular during winter months as ghee and atta provide warmth and nuts add to the taste. Let's learn how to make this delicious treat.

How to make atta pinni

To make this delicious nut laddoos you need 2 cups of Whole wheat flour (coarse flour, also called mota atta), 1/4 cup – Chana dal, 1/2 cup cashew nuts, 1/2 cup almonds, 1/4 cup raisins, 2tbsp dry ginger powder, 1/2 cup jaggery powder, 1/4 cup powdered sugar, 3/4 cup ghee.

Start by grinding soaked moong dal in a mixer grinder. Then heat 2/3 tbsp ghee in a pan and fry the chana dal powder. Cook till it turns brown and gets a brown aroma. Cook the mixture and add more ghee if you need. In another big pan, add half a cup ghee and atta flour. While the flour is roasting, add the almonds and cashews in a grinder jar and give it just one quick grind. Roast this mixture for 3-4 minutes. Once the mixture gets a nice light brown colour, add dry ginger powder, and roasted chana dal mixture and give it a good mix. At the end add jaggery powder, mix, and make small hand-sized laddoos from your mixture. Make sure you let it cool (not too much, else the pinni will not stick together) before making ladoos. 

Store them in an air tight container!
