For Indians, Holi is all about good food and family gatherings. And when we talk about Holi food, gujiya is inevitable. But this time rather than basic gujiya try out baked mewa gujiya made with thandai spices, shared by Chef Kunal Kapoor.
First of all, mix ghee and powdered sugar in refined wheat flour and knead a tight dough by adding cold water.
To make the masala of thandai, lightly roast almonds, cashews and pistachios in a pan. After this add black pepper, cinnamon, fennel, cardamom, a little nutmeg, dried melon seeds, dry rose petals and poppy seeds and fry them, but do not let them turn brown. Put all of these ingredients in a mixer grinder and grind them by adding saffron on top.
To make the filling, roast semolina (suji) in a pan on a low flame and take it out separately. Then fry grated coconut in the same pan, then add khoya and fry it. Remove the pan from the stove, add thandai masala and powdered sugar and mix them well. Now add roasted semolina to this mixture and mix well.
Now, roll the dough into a round shape. Fill it with masala filling and give it the shape of Gujiya and bake it in an oven. Thandai Baked Gujiya is ready, now serve it hot and enjoy.
