An ice bath refers to soaking the vegetables after washing them in cold water or regular water along with ice cubes for a period of 2-3 hours. Keep them in the refrigerator for best results.
Similar to blanching, an ice bath will make sure that your veggies remain crunchy and juicy when you consume them. The trick also helps maintaining the colour and texture. You can also add a couple of teaspoons of salt in the ice water. It will not just prevent the ice from melting faster but also infuse more flavour into the vegetables.
