You must have tried carrot and beetroot kanji, but have you ever tasted rice kanji? Rice Kanji is a fermented dish and is beneficial for your gut health. The fermented drink has a tangy, slightly spicy flavour, with a unique earthy undertone from the mustard seeds.

How to make rice kanji

Indian fermented food refers to a traditional drink from North India. It is a probiotic-rich beverage and mostly made from fermented black carrots, mustard seeds, and various spices. But this summer make rice Kanji at home.

Soak cooked rice in water overnight. Next day put the rice and a little water and salt in a mixer and blend them well. Add curd to this paste. To make the tadka add hing, jeera and mustard seeds, curry leaves, ginger, green chilli and urad dal in oil. Now pour this tempering over the rice mixture followed by chopped coriander leaves. Now add cold water to 3-4 spoons of kanji in a glass and serve.
