Sundays are for good food, long sleep and catching up with friends and family. This Sunday, make a special recipe for your friends and family with some leftover rice. This lemon coriander soya rice is tangy, spicy and healthy, a perfect combo for your Sunday lunch scenes. Here is the simple recipe.
Leftover rice: 2 cups
Soya Chunks: 1 cup (boiled)
Oil: 2 tbsp
Butter: 1 tablespoon
Oregano: 1 tsp
Red chilli flakes: 1 tsp
Garlic: 4-5 cloves (chopped)
Green chilli: 2 (chopped)
Onion: 1 (chopped)
Green Coriander: 1/2 cup (chopped)
Lemon juice: 2 tbsp
Grated lemon peel: 1 tsp
Salt: as per taste
To make this, add oil, butter, oregano, red chilli flakes, chopped garlic, green chilli and onion in a pan and fry. Now add boiled soya chunks and mix. Next, add salt and green coriander and give it a good toss.
Now add boiled rice to it and mix well. At the end, grate some lemon add lemon juice and give it a final toss. Make sure to have this rice hot, with a cup of dahi!
