Diwali is over but left-over dry fruits like almonds and cashews must have piled up at home. Here’s a super easy recipe for 'desi Cashew nut butter'. Shared by chef Saransh Goila, this is a yummy spread for dosa, idli or paratha.
1tbsp Ghee
1tsp Mustard seeds
A pinch of Hing
1tbsp Urad dal
3 Dried red chilies
A handful of curry leaves
150g Cashews
Salt to taste
1. Put ghee on a pan followed by mustard seeds, hing, urad dal, dried chillies, curry leaves and lastly cashews
2. Mix them well and sauté till charred
3. Toss them well.
4. Add all of this to a blender
5. Blend into a smooth paste
6. Add 1tbsp ghee to it
There you go. Your cashew butter is ready. Spread it over a dosa or have it with idli. You can also add this to your sabzis or curries.
