Rainbow blast sandwich ingredients:

2 slices of whole-grain bread
Cream cheese or hummus
Red, yellow, and green bell peppers (sliced into thin strips)
Shredded purple cabbage
Carrot shreds
Cucumber slices
Sliced strawberries (optional)
Sliced banana (optional)
Nut butter (peanut or almond) or sunflower seed butter
Honey or maple syrup (optional)

Step by step instructions to make rainbow blast sandwich:

Spread the base:

Take two slices of whole-grain bread and spread a layer of cream cheese or hummus on one or both slices.

Create the Rainbow Layers:

On one slice of bread, arrange strips of red, yellow, and green bell peppers to create a colorful rainbow.
