An exotic dish that is not only delicious but also flavourful, is Rougaille. This tomato-based dish comes from the land of Mauritius and is prepared with a variety of ingredients such as cilantro, spring onions, curry leaves, garlic, thyme, onions, etc.
So, here’s a simple recipe to make this classic dish at home.

Ingredients:
Solan Button Mushrooms: 150 grams
Himalayan kidney beans: 100 grams
Diced tomato: 50 grams
Green peas: 30 grams
Chopped Onion: 60 grams
Ginger garlic paste: 10 grams
Chopped green chillies: 5 grams
Thyme: 3 grams
Chopped Coriander: 15 grams
Curry leaves: 5-6
Oil: 1 teaspoon (5 grams)
Galgal (Himachali Lemon): ½
Salt: To Taste

Method:
Soak the red kidney beans overnight and then boil. Cut the mushrooms in quarters.
Heat oil in a pan, add curry leaves, chopped green chilli, thyme and ginger garlic paste and sauté.
Add chopped onion and sauté and let them sweat. Add the chopped tomato and let it simmer for 10 minutes.
Add the mushrooms and let it cook till 5 minutes. Add the boiled Himalayan kidney beans and cook for 5 minutes and keep stirring.
Add water to achieve the desired consistency. Add salt to taste.
Mix chopped coriander and Galgal juice. Serve with Spinach rice.
