Many of us love having eggs for breakfast, as snacks or a simple curry for lunch. However, have you ever wondered what is the right way to store eggs and what is the shelf life? We at Editorji had an exclusive conversation with Abhishek Negi, Co-founder and CEO of Eggoz, who told us in detail how to distinguish a bad egg from a good one. Speaking to us at Editorji, Abhishek Negi, CEO Eggoz said, "There are a lot of misconceptions. Along with misconceptions, there are homemade methods. A few of those methods are to look at the smell of the egg, if the egg is very stinky or do the float test in water, if it floats it is bad."
However, the CEO said that while a 15-day-old egg may be safe to consume from a food safety point of view, but it may not be nutritious. He added, "So what you should think about is number one, the size of the egg is really important because it will give you more protein and nutrition. Secondly, when you break it open, just look at the height of the yolk and albumin."
He further added, "When you crack open fresh eggs, the yolk remains intact and is tall and will have a gel-like texture."
The CEO revealed that another thing to keep in mind is the colour of the egg. Orange or yellow, which yolk is better? The businessman concluded that orange yolks have more carotenoids, which absorb more Vitamin A and are better for health.
Are you buying loose eggs from the market but cannot figure out if it is a good egg? Speaking to us, Abhishek revealed the few ways to know if the loose egg is worth buying. He said, "If buying a loose egg, look for an egg that is clean, because it will just limit the scope of Salmonella bacteria sticking on the shell of the egg. It can cause a lot of egg allergies and can cause hazards in your kitchen if not kept well."
He further said, "If you really want to check it out, turn on the torch of your mobile phone and keep the egg against the torch, the egg will shine and will get brighter. When this happens, look for hairline cracks, look out for tiny black spots inside the yolk. These spots can be contamination, can be blood spots in the yolk."
Eggs should be consumed within 10 days of buying. Anything beyond these may be safe for consumption but does not have much nutrition. One should store eggs in the refrigerator to help keep them fresh for longer.
