In a recent Instagram post, Masaba shared her lunch/dinner scene. She usually finishes her meals before sunset and one of her go-to meals is curd rice. Made with curd and tadka, this dish is a summer saviour. Here is a simple recipe.
To make curd rice you need, 2 cups cooked white rice, 1 cup yoghurt, 1/2 cup milk (or more), 1 tsp mustard seeds, 1 tsp split white lentils (urad dal), 2 green chillies, 8-10 curry leaves, 2 dried red chillies, 1 tbsp neutral or raw sesame oil, Salt, to taste.
To make curd rice mix the rice, milk, yoghurt and season to taste. Fry the mustard seeds. Once they crackle, add the remaining ingredients. Cook for about 2 minutes on low heat and pour over the rice.
Curd rice is easy to digest and is essential for proper digestion and overall gut health. Rice, the main component of curd rice, is an easily digestible carbohydrate. Combining rice with curd further aids digestion, making curd rice a great option for dinner for pregnant women and Weight Watchers.
