When discussing food, it's impossible to overlook Indian cuisine. Recently, Taste Atlas unveiled its list of the world's best sandwiches, featuring a dish from India.
Mumbai's renowned delicacy, vada pav, has secured a spot on this prestigious list, ranking 19th among the top 50 sandwiches. Vada Pav has earned an impressive rating of 4.3 and Vietnam's Bánh Mì claims the top spot on this list of exceptional sandwiches.
How to make Vada Pav
Prepare the potato filling:
- Heat oil in a pan. Add mustard seeds and let them splutter.
- Add cumin seeds, chopped green chilies, grated ginger, and curry leaves. Saute for a minute.
- Add turmeric powder and mix well.
- Add the mashed potatoes, salt, and chopped coriander leaves. Mix until well combined.
- Cook the potato mixture for a few minutes, then add lemon juice. Mix well and remove from heat. Let it cool.
Make the batter
- In a bowl, mix gram flour, turmeric powder, and salt.
- Gradually add water while whisking to form a smooth batter. The consistency should be thick enough to coat the back of a spoon.
- Shape and fry the potato mixture:
- Divide the cooled potato mixture into equal-sized balls and flatten them slightly to form patties.
- Heat oil for deep frying in a pan.
- Dip each potato patty in the gram flour batter, ensuring it's well coated.
- Carefully drop the coated patties into the hot oil and fry until golden brown and crispy. Remove and drain excess oil on paper towels.
Assemble the Vada Pav
- Slit the pav horizontally, without cutting it into two separate halves.
- Spread green chutney on one side of the pav and sweet chutney on the other side. Optionally, spread garlic chutney for extra flavor.
- Place a hot vada (potato patty) between the pav.
- Serve hot with additional chutneys on the side.
