Translated as "boiled galangal chicken soup," Tom Kha Gai is a delectable fusion of coconut milk, tender chicken pieces, galangal (a reddish-brown woody plant akin to ginger), lemongrass, garlic, bird's eye chili peppers, kaffir lime leaves, fish sauce and shiitake mushrooms.
