In a recent interview with YouTuber Raj Shamani, cardiologist Dr Bimal Chhajer shared a "zero oil" recipe for making tomato-based Indian gravies.
To cook without oil, heat a pan, put cumin seeds in it and roast them.
Now, add onions and water to the pan. Let onions absorb the water then add spices to it and mix it with water again. Fry the masala well and add chopped tomatoes to it. Fry this masala until it completely changes its colour. Your basic masala is ready now add any of your preferred vegetables in it and your no-oil sabzi is ready.
