An exotic dish that is not only delicious but also flavourful, is Rougaille. This tomato-based dish comes from the land of Mauritius and is prepared with a variety of ingredients such as cilantro, spring onions, curry leaves, garlic, thyme, onions, etc.&nbsp;
So, here&rsquo;s a simple recipe to make this classic dish at home.
Method:&nbsp;
Soak the red kidney beans overnight and then boil.&nbsp;Cut the mushrooms in quarters.&nbsp;
Heat oil in a pan, add curry leaves, chopped green chilli, thyme and ginger garlic paste and saut&eacute;.&nbsp;
Add chopped onion and saut&eacute; and let them sweat.&nbsp;Add the chopped tomato and let is simmer for 10 minutes.
Add the mushrooms and let it cook till 5 minutes.&nbsp;Add the boiled Himalayan kidney beans and cook for 5 minutes and keep stirring.&nbsp;
Add water to desire consistency.&nbsp;Add salt to taste.&nbsp;
Mix chopped coriander and Galgal juice.&nbsp;Serve with Spinach rice.&nbsp;

Solan Button Mushrooms: 150 grams&nbsp; Himalayan kidney beans: 100 grams&nbsp; Diced tomato: 50 grams&nbsp; Green peas: 30 grams&nbsp; Chopped Onion: 60 grams&nbsp; Ginger garlic paste: 10 grams&nbsp; Chopped green chillies: 5 grams&nbsp; Thyme: 3 grams&nbsp; Chopped Coriander: 15 grams&nbsp; Curry leaves: 5-6 &nbsp; Oil: 1 teaspoon (5 grams)&nbsp; Galgal (Himachali Lemon): &frac12; &nbsp; Salt: To Taste&nbsp;
