<p>In Indian culture, Holi holds significance as a time for indulging in delicious food and coming together with loved ones. Among the traditional Holi treats, gujiya stands out as a must-have. However, this year, Chef Kunal Kapoor suggests adding a twist by preparing baked mewa gujiya infused with aromatic thandai spices.</p>
<h3><strong>Recipe for baked mewa gujiya</strong></h3>
<p>To begin, blend ghee and powdered sugar into refined wheat flour, then knead the mixture into a firm dough using cold water.&nbsp;</p>
<h3><strong>Recipe for thandai masala</strong></h3>
<p>For the thandai masala preparation, lightly toast almonds, cashews, and pistachios in a pan. Then, add black pepper, cinnamon, fennel, cardamom, a pinch of nutmeg, dried melon seeds, dry rose petals, and poppy seeds, ensuring they don't brown. Transfer these ingredients to a grinder, along with saffron, and grind into a fine powder.</p>
<h3><strong>How to make the gujiya filling</strong></h3>
<p>For the filling preparation, lightly roast semolina (suji) in a pan over low heat and set it aside. In the same pan, fry grated coconut until golden brown, then add khoya and fry until aromatic. Remove the pan from the heat, stir in the thandai masala and powdered sugar until well combined. Finally, mix in the roasted semolina thoroughly to complete the mixture.</p>
<p>Next, shape the dough into rounds and fill each with the masala filling, forming them into the traditional gujiya shape. Bake the filled gujiyas in the oven until golden brown. Once done, your Thandai Baked Gujiyas are ready to be served hot and savored. Enjoy this delightful treat!</p>

<p>Thandai is a milk based drink that is perfect for Holi and other festivals like Mahashivratri. It is made using a special mixture of seeds, flowers and nuts. Some even add bhang (edible part of cannabis) to the drink.</p>
<p>To make this mix you need cashews, almonds, poppy seeds, saffron, fennel seeds, melon seeds, cardamom pods and rose buds. Grind the ingredients to a fine powder. Make sure to dry roast the ingredients before grinding it as it increases the flavour.</p>
<p>To make the thandai, heat 2 cups of milk in a pan till hot. Add in 2 teaspoon sugar and 2 tablespoons of thandai masala. Mix well and serve warm or cold.&nbsp;&nbsp;</p>
