Step 1&nbsp;
Take 500 grams of udon noodles and cook them in boiling water with a pinch of salt in it. Once cooked, rinse the noodles with cold water, drain and set aside.&nbsp;
Step 2&nbsp;
Heat some oil in a pan. Chop and add 3-4 cloves of garlic into the pan. Next, add 2 diced scallions. Saute for a minute.&nbsp;
Step 3&nbsp;
Add 1&nbsp;cup shredded&nbsp;cabbage, &frac14; cup&nbsp;julienned carrots, and 3 sliced mushrooms of your choice into the pan.&nbsp;

Step 4&nbsp;
Prepare the sauce by combining 1&nbsp;tbsp soy sauce, 1 tsp oyster sauce, 1 tbsp mirin, 1 tbsp sugar, and 1 tsp Gochugaru into a bowl. &nbsp;
Step 5&nbsp;
Add the prepared sauce into the pan along with the noodles and stir. Serve hot.&nbsp;
